A fat-added lunch

Eating a low-carb high-fat (LCHF) diet as I do, it isn't good enough to avoid or reduce carbohydrates in my meals. I also need to eat plenty of healthy, tasty, satisfying fat. Ideally, I want the grams of fat in my meals to out-number the grams of carbs and protein combined, and I want the carbs to be minimal. (See my post on the fat-burning quotient.) My low-carb week in review: April 5 – April 11, 2015

In dieting, as in most areas of life, averages can be deceptive. Take my daily averages of calories and net carbs consumed for last week -- 1, 831 and 39 grams respectively. And 72% of calories from fat. Not bad, not bad at all. Those averages imply a low-cal, low-carb consistency over the seven days, a steely resolve to eat the right way every day. Just your basic low-carb blueberry pancake

People eating low-carb, high-fat usually learn pretty quickly about wheat flour substitutes. At least they do if they have a hankering for foods like pancakes and waffles. To be honest, I'm happy eating eggs for breakfast most mornings, with or without bacon or sausage on the side. But a change of pace only enhances the pleasure you take from the usual, customary fare. Chowing down low-carb style at Red Robin

I try to be a food-snob, I really do, but it seldom works for long. Despite years of education, and my wife's best attempts to refine me, I remain a regular guy with regular guy tastes -- such as, for instance, the Bacon Cheeseburger at our local Red Robin. Lacto-vegetarian lunch — oh my!

Working from home today, I put together a meatless lunch. It consisted of fresh avocado, hummus, mushrooms, and full-fat yogurt with blueberries. The yogurt had active cultures (probiotics), which are something I want to get into my diet more. Here's the nutritional breakdown for the food shown in the photo: Calories = 314 Fat = 23g Carbs = 24g Fiber = 9g Protein = 8g It was a low-cal lunch. Most days, I eat 400 or more calories for lunch. No-filler salmon patties in coconut oil

Since salmon is a carb-free food, it should be easy to create a low-carb salmon patty, right? Just leave out other ingredients that would add carbohydrates. Easy-peasy. That's how I figured it in 2011 when I wrote one of the most popular posts on this blog:  "No-filler salmon patties."  The recipe presented in that post is about as simple as they get. Going nuts on a low-carb diet

I like nuts. My favorites are almonds, macadamias, pistachios and walnuts. I like peanuts, too, and although I know they're a legume, it's hard not to lump them in with honest nuts. A handful of just about any kind of nut is a great snack, packing solid nutrition within a reasonable carb-count (although just how reasonable depends on the nut).  Above all, nuts are tasty and easy to eat. Sardines: low-carb, high-fat lunch in a tin

A tin of sardines makes a quick, easy, nutritious and portable low-carb lunch or snack. It's another food item that I seldom, or never, ate before going low-carb, a hard-to-explain list that includes salmon, almonds, macadamia nuts, and fresh avocado. Sugar is never free

  I don't eat much sugar anymore, and I especially don't drink sugar, but I don't really see it as the root of all dietary evil, either. Just the root of some dietary evil. Perhaps most.
