I made -- and enjoyed -- these almond/ coconut flour blueberry pancakes for breakfast today, attempting to improve the recipe I posted a couple months ago. The basic ingredients remained the same: two tablespoons of coconut flour, six tablespoons of almond flour, and two whole eggs. People eating low-carb, high-fat usually learn pretty quickly about wheat flour substitutes. At least they do if they have a hankering for foods like pancakes and waffles. When my wife was 11 years old, she was mesmerized by Peter Tork, a member of the Monkees. Depending on whom you ask, the Monkees were either actors in a TV comedy or musicians in a rock-band.
