Study: low-carb diet reduces food cravings

By Jim May 17, 2017

A study in The FASEB Journal (which, as you probably know, well-read person that you are, is the Official Journal of the Federation of American Societies for Experimental Biology) finds that consuming a low-carb, high-fat diet is "associated with reductions in cravings for all food categories." The researchers define a craving as "an intense desire to consume a particular food that is difficult to resist." … [Read more...]

Cauliflower: the better mashed potato

By Jim May 7, 2017

You can do a lot of things with "cabbage flower" on a low-carb, high-fat (LCHF) diet: steam it, roast it, mash it, rice it, or just eat it raw. Of course, one drawback to raw veggies, including cauliflower, is that they're harder to fatten up that way. But a good, fatty dip will do the trick. I've never had cauliflower deep-fried or baked, but I suppose those are possibilities, too. I'm not sure what you'd bread it in, though -- crumbled pork rinds, perhaps? Oh -- you can also eat cauliflower … [Read more...]

Green beans: low-carb and familiar

By Jim April 30, 2017

green beans

Green beans (a.k.a. snap beans or string beans) are a familiar vegetable, and reasonably low-carb and nutritious. I find it hard to get excited about them, though. Like most people in the American mid-lands, I've been eating green beans my whole life. As a kid, I ate a lot of canned veggies -- including corn, spinach, peas, lima beans, and, yes, green beans. Today, the only canned vegetable I eat at home is spinach. However, I often encounter canned green beans at restaurants. I go ahead and … [Read more...]

A low-carb dieter’s blood test results (updated)

By Jim April 26, 2017

Blood tests

When I first began eating my low-carb, high-fat (LCHF) diet, and losing pounds and inches around the middle, I encountered the occasional nay-sayer -- someone who was sure all that fat in my food was going to clog up my arteries and kill me dead, sooner rather than later. I've escaped that fate for six years. Indeed, within a few months of starting my low-carb diet, I had significantly reduced my belly-fat, and my blood-pressure. Those were powerful indicators that I was improving my odds … [Read more...]

Low-carb snacks to keep the munchies at bay

By Jim April 5, 2017

a few of my favorite low-carb snacks

Yes, there are great low-carb snacks -- quite a few of them, in fact -- but standard munchables such as potato chips and corn chips aren't among them. No, neither are little powdered donuts. Admittedly, anyone trying to lose weight, via a low-carb diet or otherwise, ought to avoid snacking as much as possible. The whole idea is to encourage your body to burn its fat, and constantly eating is poor strategy in that regard.  However, if you're like me (that is, human), you like to eat and eat … [Read more...]

A classic low-carb breakfast for burning fat

By Jim March 29, 2017

Basic low-carb breakfast: eggs, sausage and guacamole

The classic low-carb breakfast starts with eggs, in one form or another, and often ends there. Scrambled eggs and fried eggs are my mainstays. Sometimes, for the sake of variety, I might have hard-boiled or poached eggs, but the problem with those is too little fat. Remember, I'm eating a HIGH fat, low carb diet. I want a great fat-busting ratio of fat to carbs plus protein to start my day. (See my post on calculating the Skaldeman fat-burning quotient.) So eggs pan-cooked in butter or coconut … [Read more...]

Perfect low-carb blueberry pancake recipe

By Jim March 26, 2017

For months, I've been working to perfect my low-carb blueberry pancake recipe. I'm finally there. What makes these the perfect pancakes? Well, they're easy to make -- just five ingredients. And they're high in fat, low in net carbohydrates, and the recipe makes just enough for one person to eat on a weekend morning when he or she is hungry for a treat. Oh, and the blueberries add a lot to the experience! I suppose a person could share the pancakes with another person if that other person would … [Read more...]

Calculating Skaldeman’s fat burning quotient

By Jim July 10, 2015

A fat burning quotient of 1 is when fat weight equals carbs plus protein

When I started this blog many years ago, I was eating a "low-carb" diet. Now I'm eating a "low-carb high-fat (LCHF)" diet. The change in terminology is significant. The goal is not to replace excessive carbohydrate with excessive protein, but with quality fat. I'm trying to get more than 70% of my daily calories from fat. A useful tool for deciding what to eat on an LCHF diet is "Skaldeman's fat burning quotient." The quotient is named after Swedish diet guru Sten Sture Skaldeman, who … [Read more...]
