Green beans (a.k.a. snap beans or string beans) are a familiar vegetable, and reasonably low-carb and nutritious. I find it hard to get excited about them, though. Like most people in the American mid-lands, I've been eating green beans my whole life. As a kid, I ate a lot of canned veggies -- including corn, spinach, peas, lima beans, and, yes, green beans. Today, the only canned vegetable I eat at home is spinach. However, I often encounter canned green beans at restaurants. I go ahead and … [Read more...]

A low-carb dieter’s blood test results (updated)
When I first began eating my low-carb, high-fat (LCHF) diet, and losing pounds and inches around the middle, I encountered the occasional nay-sayer -- someone who was sure all that fat in my food was going to clog up my arteries and kill me dead, sooner rather than later. I've escaped that fate for six years. Indeed, within a few months of starting my low-carb diet, I had significantly reduced my belly-fat, and my blood-pressure. Those were powerful indicators that I was improving my odds … [Read more...]
Is broccoli low-carb? Compared to what?
Is broccoli low-carb? It depends . . . I haven't written many posts about vegetables over the years. Nuts, yes. Seeds, yes. Even fruits (avocado, blueberries, strawberries and tomatoes). Once in a while, I've put up a photo of a plate with, say, a few green beans and a big juicy steak. But the focus has not been on the beans. The lack of focus on veggies may give readers the false impression that I don't eat many. In fact, I do veggies. Not just lettuce, either, but real, honest-to-gosh, … [Read more...]
Great foods for a low-carb diet (part 6): pecans
The pecan: a low-carb, high-fat powerhouse Move over almonds, get outta here walnuts. When it comes to being a truly great low-carb, high-fat (LCHF) nut, the humble pecan has you both beat. On the key criterion of net-carbs (total carbs minus fiber), a single quarter-cup serving of pecans has only one. That's right. Naturally low-carb pecans (raw) have just one net-carb per serving (4 grams carbs - 3 grams fiber). That's a good start, but not the whole story. Almonds are also … [Read more...]
Eating low-carb at Taco Bell
Can you really eat low-carb at Taco Bell? If not "low-carb," you can at least eat "lower-carb" at Taco Bell, and get some quick tasty affordable nutrition while you do it. Of course, you must go in with a plan, and that means conducting a little research. Even then, I'm not suggesting that Taco Bell -- or for that matter, any fast-food restaurant -- is a good place to eat while on the induction phase of the Atkins plan. It's hard to keep your net carbs down to 25 grams a day if you eat anywhere … [Read more...]
Home improvements
Links to Updated and Refurbished Posts "Life After Carbs" is six years old, which is 120 in Internet years. At such an advanced age, the site needed some tender-loving-care, so I put on the tool-belt and hardhat and went to work. I changed the look and organization of the homepage, and perhaps more importantly, reviewed and revised a whole bunch of posts and pages that told the story of my continuing low-carb life-style. In many cases, a good post had gotten buried and forgotten (even by me). … [Read more...]
Low-carb snacks to keep the munchies at bay
Yes, there are great low-carb snacks -- quite a few of them, in fact -- but standard munchables such as potato chips and corn chips aren't among them. No, neither are little powdered donuts. Admittedly, anyone trying to lose weight, via a low-carb diet or otherwise, ought to avoid snacking as much as possible. The whole idea is to encourage your body to burn its fat, and constantly eating is poor strategy in that regard. However, if you're like me (that is, human), you like to eat and eat … [Read more...]
